Ingredients;
- 3 potatoes ( remove skin, boil & cut into cubes)
- 1 red onion ( chopped finely)
- 1 tbspn of white vinegar
- a pinch of seasalt
- a handful of chopped spring onion/ chives
- 2 tbspn of mayonnaise
- pepper & red chilli flakes (optional)
Methods:
1. In a salad bowl, add the chopped onion with the vinegar & pinch of seasalt & mix well.
2. Add the cubed potatoes & stir in the mayonnaise , pepper, chilli flakes & toss gently. Garnish with chopped spring onion/chives.
3. Chill before serving or you can have them warm. Both ways, still delicious.
