Fried Carrot Cake




Ingredients;

- 1 kg carrot cake (cut into small cubes)
- 12 cloves garlic (chopped)
- 2 tbspn oyster sauce
- 1/2 cup sweet soya sauce 
- 1 tbspn fish sauce
- 1 tbspn dark soya sauce
- small bowl oysters meat ( slice into half) 
-  2 tbspn chai poh ( preserved radish) 
- 10 eggs ( beat the eggs in a bowl & set aside) 
- some oil for frying 
- 2 tbspn sesame oil 
- some ground white pepper
- cili paste for added spiciness (optional) 

Garnish;
Chopped spring onion.
Sambal 

Methods;

1. Heat up the oil in a large frying pan in medium heat. Fry the chopped garlic, chai poh & cili paste (optional) till fragrant then add the oyster meat & stir-fry till the meat is cooked.

2. Next, add the cubed carrot cake & stir well. Then add all the sauces, sesame oil & pepper and mix well. Lastly add the beaten eggs and with a spatula, scramble & toss everything together till they're done. 

3. Serve hot & garnish with chopped spring onion. You may add sambal for added spiciness.

Nasi Goreng Kampung





Ingredients;

-5 cups of cooked basmati rice
-3 large onions
-12 cloves of garlic
-2 inch belacan (dried shrimp paste)
-a handful of anchovies( ikan bilis) 
-a handful of mix of red & green birds' eye chillies 
- olive oil for frying
- sea salt to taste
- 2 tbspn sweet soya sauce ( kicap manis) 
- white pepoer
- 4 eggs scrambled
- a cup of frozen mixed veg
- abt a dozen of deshelled prawns 

Garnish:
Sunny side up egg, some fried anchovies, fish crackers, sliced cucumber.  lettuce

Methods:

1) Using a food processor, blend coarsely the onions, garlic, belacan, anchovies & the chillies. 
2) Heat the olive oil & add the blended paste & fry till fragrant. 
3) Next, add the prawns and stir till prawns are cooked.
4) Add sea salt to taste , sweet soya sauce and white pepper. 
5) Next, add the cooked rice & stir well and lastly the scrambled eggs. 
6) Garnish as shown in the picture above or according to.your own preference.  Enjoy while it's hot!

Mee Hailam






Ingredients:

- 1 kg egg noodle
- 12 cloves garlic - chopped 
- 2 large onions - mince finely
- 2 tbspn chilli paste
- 2 tbspn oyster sauce
- 1/2 cup sweet soya sauce ( kicap manis)
- 2 tbspn cili sauce 
- 2 tbspn tomato sauce
- 1 tspn sesame oil 
- meat of choice ( I used some sliced beef, prawns, sliced fish cake & sliced squid )
- salt & pepper 
- some olive oil 
- 1 tbspn corn flour - mix with 2 tbsp water
- 2 eggs
- some chopped chye sim ( boil for a few sec in boiling water mix with a lil olive oil , drain and set aside) 
- 1 large carrot, slice thinly
- 1 ltr of water

Garnish: fried shallots & chilli in vinegar.

Methods;

1. Soak the egg noodle in boiling water for a few minutes, drain & set aside.

2. Heat the cooking pot with some olive oil & fry the chopped garlic & onion till fragrant
 
3. Next add the chilli paste & fry for a minute. Then add in the sauces, sesame oil & pepper. 

4. Add the sliced beef & cook till the meat is tender. Then add the rest of the meat & the sliced carrot.

5. Add water and cook for 10 minutes. Add salt & pepper to taste.

6. Crack 2 eggs in the broth & stir well. Lastly add the cornflour mixture to.thicken the broth. 

7. To serve, add some of the egg noodles in a bowl & pour the broth over the noodles & top with fried shallots & chye sim. Enjoy.
